By Chef Luis Rodriguez

Spring is such a beautiful season. I get particularly excited about integrating tropical flavors, fruits and vegetables that reveal my Puerto Rican heritage and bring back childhood memories of my hometown in Fort Lauderdale, Florida. I love the freshness and greenery of the season. My spring dishes always showcase the colors and flavors displayed in this vibrant time of year.

Earthy Spring Fiesta: Alaskan Halibut-Stuffed Arepas

Let’s bring it south

The great thing about the South American corn flatbread (arepas) is that it can be easily complimented by any protein and cooking technique. In this case, the sweet-tasting, delicate, buttery note of the Alaska halibut not only complements this dried-corn staple of the Venezuelan household, but garnished with acidic produce, the fried P.A.N. pre-cooked corn meal becomes the perfect marriage to this catch.

The wild side

Because of its leanness, this fish can easily dry out if overcooked. To maintain its tenderness and moisture, I choose to pan fry it to an internal temperature of about 125°F, seasoned with sea salt and a dash of smoked paprika.
I love the experience of buying seafood. Variety and expertise is always important to me and that’s why B & E Meats and Seafood is my preferred fish market. Those guys are so professional. I know I’m talking to experts that don’t just say “yes” to what I ask for. They get truly immersed in my dish preparation and will sometimes even help me brainstorm a specific dish. Beyond their very fresh food and fine cuts, they have four locations in the Greater Seattle area, which is convenient for me.

Greens and things

A Latin party (or fiesta) is never a true celebration unless it offers an extensive variety of color and texture. This dish is a scrumptious reminder of the classic fiesta piñata. The arepa is stuffed with the tasty fish and garnished with blood orange for a light, acidic pop, avocado for its creamy blend, mango for its sweet and tart flavor and papaya for its peppery savor and slight crunch. Can you say delicioso?

Mother's Day is May 13 - are you ready?

May 13 may be one day that we officially dedicate to mom, but there are two things to remember. 1) She works hard every day of the year; think about celebrating her more often! 2) Every mom is different, so the variety we have at B & E Meats and Seafood means you can meet any mom’s food crushes and do it frequently! If she’s a red meat eater, we have her covered with steaks, prime rib, and our tender tri-tip. Leaner lover? Try stuffed pork or kalbi chicken. Savor seafood? So many options: lobster, wild prawns, salmon, halibut, Dungeness crab, scallops. Here’s the best part (besides the freshest product): if you don’t really know how to cook for mom, we will give you recipes and cooking tips and techniques. She’ll be wowed!

Bleu Cheese or Regular Burgers Anyone? ... We've Got You Covered!

All of our ground beef is hand ground just for you!

What’s more American than the burger? It may have been named after Hamburg (a city in New York taking the name from Hamburg, Germany), with various states taking credit for creating it in the late 1800s. No surprise, the bun came about because we Americans just have to be on the move: it made the hamburger steak easier to eat on the run.

Because of our extensive grasslands for grazing, Americans ate a lot of beef, and hamburger was one of the least expensive ways to go. In the late 1920s, someone (stories vary as always) topped the burger with some cheese. History was made.

(Tip: if using a slice of cheese, put it under the meat on the bottom bun to keep the bun from getting soggy.) Naturally, we hand grind the beef for our hamburgers and take that cheese idea one step further: we add bleu cheese into the burger. One less step for you and oh, so delicious!

B & E's Famous Tri-tip*

Tri-tip comes from the sirloin and is a wonderful cut to marinate and then barbecue or cook in the oven. We marinate this triangular-shaped muscle with a mild teriyaki sauce, almost more of an au jus, so that it is as tender as prime rib. Popular in California, we brought it to the Northwest about 20 years ago and developed our in-house (secret!) marinade. Once cooked, trim the fat, and cut across the grain. It is wonderful served on a bun with horseradish and a slice of cheese, dipping in au jus. Veggies and rice make the perfect meal. Come try this B & E gourmet product!

B & E's Famous Teriyaki Beef Tri-tips are usually $11.99 / lb., but are on sale right now for just $9.99 / lb. What a perfect choice to get BBQ season started or to break in a new grill!
